1 egg yolk
¼ c. flour
¼ tsp salt

Directions:
Drop in boiling water. When they float to top, cook 3 minutes.

Like so many of Kay's recipes the directions are sketchy, and that is how she spelled Gnocchi.

Here are the "extended" directions. Peel, boil and mash the potatoes. Cool. Add the egg yolk and salt. Gradually add flour. Dough should not be sticky. Roll into ½ inch cylindar and cut into ¾ inch pieces, Flatten with pieces with a fork and pinch the edges together to form Gnocchi shaped balls. Boil and serve with your favorite sauce.

You can flavor the Gnocchi with a little sautéed garlic or some finely chopped herbs.
