5 egg yolks, slightly beaten
1/3 cup sugar
1 tsp. vanilla
1/8 tsp. salt
1/4 cup sugar

Preheat oven to 325 degrees. Place 6 small soufflé (custard) dishes in a 9 x 13 inch baking pan.

In a heavy saucepan, heat cream over medium-low heat until bubbly. Remove from heat and set aside. In a mixing bowl, combine egg yolks,1/3 cup sugar, vanilla, and salt. Whisk until combined. Slowly whisk hot cream into egg mixture. Pour custard mixture into the custard cups. Place the baking pan on the oven rack. Pour enough boiling water into the baking pan to reach halfway up the outsides of the custard cups. Bake the custards in the oven at 325 degrees for 30 to 40 minutes or until a knife inserted into the custard comes out clean. Remove custards from baking pan, cool on a wire rack.
Cover and chill for 1 to 8 hours.

Before serving let custards stand at room temperature for 20 minutes. Meanwhile, heat 1/4 cup sugar in a heavy skillet over high heat until sugar begins to melt, shaking the skillet to heat sugar evenly. Do not stir. Once the sugar begins to melt, reduce heat to low and cook about 5 minutes or until the sugar is melted and golden, stirring as needed with a wooden spoon. Quickly drizzle caramelized sugar over custards. If sugar starts to harden in the skillet, return to heat to melt. Serve immediately.
