1/2 t Lime zest finely grated
2 T Light brown sugar
2 T Light rum
1/4 t Salt
6 lb Watermelon chilled
2 T Fresh mint leaves, shredded

Directions:
Directions:
1. In a large wol, wisk together lime juice, sugar, rum and salt
2. Usine a melon baller, scoop melon into balls - or cut melon into chunks.
3. Add melon to lime mixture in a bowl. Sprinkle with mint and lime zest and toss gently to combine.
4. Serve immediately or cover and refrigerate for up to 2 hoiurs.
