Ingredients: 4 c strawberries (2 c crushed strawberries) 4 c sugar 1 package SURE-JELL premium Fruit Pectin ¾ c water

Directions:Remove and discard strawberry stems. Crush strawberries. Use liquid measuring cup to measure exact amount of prepared fruit into large bowl. Measure EXACT amount of sugar; add fruit. Let stand 10 minutes; stirring occasionally. (DO NOT REDUCE THE SUGAR OR USE SUGAR SUBSTITUTE SINCE THIS WILL RESULT IN SET FAILURES.) Stir in 1 package Sure-jell pectin and water in small sauce pan. (Pectin may start out lumpy.) Bring to a boil on high heat, stirring constantly. Boil 1 minute stirring constantly. Remove from heat. Add pectin mixture to fruit; stir 3 minutes or until completely dissolved and no longer grainy. (A few sugar crystals may remain.) Fill all containers immediately, leaving ½ inch space at tops for expansion during freezing; cover with lids. Let stand at room temperature 24 hours or until set. Refrigerate up to 3 weeks. Or, freeze up to 1 year. If frozen, thaw in refrigerator before using. |

Notes: Freezer jams have softer sets than cooked jams, but can be prepared in half the time. (This recipe will make 6-7 jelly jars for 1 recipe.) Strawberry Freezer Jam was always a favorite at in the Stuckey house, and Grandma always sent home plenty at Christmas time.
