1 lb shrimp
1/2 cup butter
1 medium onion, diced
1 small red bell pepper, diced
2 stalks celery, diced
2 Tbsp flour
1 small can tomato sauce
Bay leaf
Salt and pepper to taste
Cajun seasoning
Chopped green onion for garnish

Directions:
Directions:
Saute vegetables in butter.
Stir in flour and cook 1 minute.
Add 2-3 cups of chicken or seafood stock (depending on how thick you want it)
Add tomato sauce, bay leaf and Cajun seasoning.
Simmer for 15 minutes.
Add shrimp and cook until just pink.
Serve over rice and sprinkled with green onion.
