1 lb. black beans (dry)
10 cups water
3 Tbsp. oil
1 medium onion (chopped)
1/2 tsp. pepper
1/4 tsp. oregano
1 green bell pepper (chopped)
1 bay leaf
3 Tbsp. vinegar
1/4 cup wine
1/4 cup olive oil
salt to taste

Directions:
Directions:
Soak beans in water. Cook until tender. Sauté onion, garlic, bell peppers and bay leaf in hot oil, (approximately 5 minutes), add to beans. Take 1 cup of beans from pan and add pepper, oregano, sugar, vinegar, wine & olive oil. Mash mixture and add to beans. Add salt to taste and cook slowly until thickened.
