6 cups (approximately 2 lbs) sliced yellow squash
4-6 green onions, chopped
Salt & pepper to taste
4 Tbsp butter
1 egg beaten
˝ cup sour cream
6 slices bacon, cooked & crumbled
˝ cup shredded swiss cheese
1/ cup shredded cheddar cheese

Directions:
In a large skillet, sauté squash and onions in butter for 15 minutes or until tender. Remove from heat and sprinkle with salt & pepper. Combine egg and sour cream; stir in ˝ of bacon and add to squash mixture. Blend and spoon ˝ of squash mixture into a buttered 1-1/2 quart baking dish and sprinkle with swiss cheese on top. Spoon the remaining squash mixture into baking dish and sprinkle cheddar cheese and bacon on top. Bake at 350 degrees for 20 minutes.
