Make butter

Place 2 drained roasted red bell peppers from a jar in food processor, pulse to finely chop...
Add 1/2 cup softened butter...
1 t smoked paprika, 1/2 t cumin and salt to taste...
Pulse this mixture, it will be chunky...
Scrape the butter mixture into a serving bowl...
If not using immediately cover and place in frig...

Corn

Preheat grill...
Pull back corn husks, do not remove, tie with string or thin wire...
Remove corn silk...
Brush corn with olive oil...
Salt and pepper corn and place on grill that is hot...
Cook turning frequently for 12 to 15 minutes, be sure it gets somewhat charred...
Transfer to a plate, spread the bell pepper butter on it...
Sprinkle with 1/2 cup finely grated manchego cheese and serve!

You can sub the manego with Parmesan cheese, finely grated and also add a 1/2 cup finely chopped Italian parsley.

What I gave you serves 8, 1 ear of corn per person....
