Ground Beef Variation

1 lb. Ground Beef
1 medium Onion
2 Tin Tomato Soup
1 Tin Canned Peas and Carrots
5 Potatoes, peeled and quartered
Butter
Milk

Directions:
Directions:
Fry the ground beef and onions. Drain any fat from the meat. Add 1 tin of tomato soup and 1 tin peas and carrots and put into a roaster.

Boil the potatoes, then mash with butter and milk. Place potatoes on top of the meat mixture.

Bake for 45 minutes at 350ºF until brown.
 

Ground Chicken/Turkey Variation


Ingredients:

1 ½ - 2 lbs Potatoes
⅓ c. Milk
1 Egg, beaten
2 tbsp. Butter
1 medium Onion, chopped
2 c. Frozen Veggie mix (Corn, Peas, Green Beans, Carrots)
1 lb. Ground Turkey
1 ½ c. Chicken Broth
1 tsp. Worcestershire Sauce
Salt, Pepper, Paprika

Peel and quarter the potatoes. Place in medium sized pot and boil in water. Reduce to simmer for about 20 minutes or until tender. While boiling, start to saute the vegetables.

Melt butter in a fry pan on medium heat. Add the chopped onions and frozen veggies and fry until tender and warmed through. Add the ground turkey, and fry until no longer pink. Add the Worcestershire sauce and chicken broth. Bring mixture to a simmer then reduce heat to low. Cook uncovered for 10 minutes, adding more broth if necessary to keep the meat from drying out.

When tender, drain water and mash the cooked potatoes with the egg and milk. Season with salt and pepper to taste.

Preheat oven to 400ºF. Layer a 13x9 glass dish evenly with the meat mixture. Spread the mashed potatoes over the top of the mixture. Rough up the surface of the mashed potatoes with a fork so that there are peaks that will brown while baking (Sprinkle with paprika if you so desire). Bake in oven for 30 minutes.
