1 1/2 cups water
1/2 cup whole milk
1/2 inch fresh ginger root, peeled and chopped
1 cinnamon stick
2 tsp cardamom seeds, or crushed green cardamom pods
1 1/2 TBSP black tea leaves
1 1/2 TBSP sugar
Optional: 1 star anise, 1/4 tsp black peppercorns

Directions:

1. Mix all ingredients except milk into a small saucepan. Bring to a boil over high heat, stirring occasionally. Boil for 3-5 minutes.
2. Turn heat to low and add milk, stirring until warmed through. Strain into mugs. Serve hot, or chill in the refrigerator and serve cold over ice.
