2 lbs Chuck Roast
1 onion diced
1 cup carrots diced
2 cloves garlic
2 tbsp. sweet paprika
1 tsp. caraway seeds
1 oz. white vinegar
2 tbsp. tomato paste
1 tbsp. flour
2 cups beef stock
oil, salt and pepper
parsley and sour cream (over noodles)

Directions:
Directions:
Season beef with salt and pepper. Sear and take out of pot.
Add oil and reduce heat
Add onions, garlic, carrots, salt and pepper, caraway seeds and paprika.
When soft add tomato paste.
Add beef stock and flour - Mix well.
Cover and put in a 325º preheated oven for 2½ to 3 hours mixing occasionally.
Serve over noodles and top with sour cream and parsley.
