2 Tablespoons oil
1/2 cup roasted peanuts
1 pound boneless, skinless chicken breast, sliced thin
2 cloves garlic, chopped
Cilantro (chopped)
3 Tablespoons sweet chilli sauce
1 small red bell pepper, roughly chopped
1 small red onion, chopped
1 cup diced mango
1 lime
1/2 cup Jasmine Rice

Directions:
Directions:
Heat the oil in a wok or heavy bottomed skillet over medium-high heat.

Fry/bake nuts until they just start to change color.

Add the Oil to pan and lheat. Add the sliced chicken; Stir-fry for a few minutes until cooked through (aprox 4 mins per side).

Make mango salad in separate bowl, chopped mango, red pepper, red onion sweet chilli sauce, cilantro & lime.

Serve salad and chicken on top of jasmine rice sprinkled with nuts.
