12 medium jalapeno chiles
8 oz cream cheese, softened
1 c finely chopped cooked chicken
2 Tbsp finely chopped fresh cilantro
1 Tbsp fresh lime juice
¾ tsp salt
12 slices hickory smoked bacon, cut in half
toothpicks

Directions:
Directions:
Preheat oven to 400º. Cut each chile in half lengthwise, remove seeds and membranes. Stir together cream cheese, chicken, cilantro, lime juice and salt. Spoon mixture into each chile half, filling shell. Wrap each chile with half bacon slice and secure with toothpick. Place on lightly greased wire rack in an foil wrapped bacon sheet. Bake about 25 minutes or until bacon begins to crisp and chile softens. Change oven temperature to broil; broil until bacon is crisp, about 2-3 minutes. Let stand 5 minutes before serving.
