1 1/2 pounds chicken breasts - cut up
1 pound small red potatoes, halved
1 teaspoon salt
1 tablespoon Dijon mustard
1 tablespoon of oil
1 pound broccoli, trimmed and cut into 1-inch pieces

*ANY other veggies you want to throw into the mix!

Heat the oven to 400°F. Perpare a rimmed baking sheet (I add a layer of parchment for easier clean up).

Season the chicken and potatoes in a bowl with oil salt mustard (OR oil and and pre packed spice such as Montreal chicken spice). Pour mixture onto parchment and pop into the over.

Start roasting the chicken and potatoes; about 15 minutes. Meanwhile, combine oil/seasoning with other veg in bowl.

Add the broccoli & any other quicker cooking veggies to the sheet pan.

Bake until crispy: about 10-15 minutes more.
