1 large (28 oz.) can diced tomatoes

1 lb. frozen mixed vegetables (corn, peas, carrots, snap beans)
4 or 5 medium potatoes - peeled and cubed
1/2 medium onion - thinly sliced

2/3 cup elbow macaroni noodles

In a large pot, cook the ham hock in water until done. Remove the ham hock from the water. (You can slice a few pieces of ham from these and make ham biscuits.)

Set aside about 1/2 of the ham juice - you may or may not need it later. If not, you can freeze or make something else.

In a small saucepan, cook the tomatoes until they are done and then mash them.

In the large pot with 1/2 of the ham juice, add the frozen vegetables, potatoes and onion. You can also add in some frozen butterbeans if you like. Bring to a boil and cook for a short while. Reduce the heat to low; add the cooked and mashed tomatoes. Sample to see if you need more ham juice - add more of the ham juice or water if needed. Continue cooking uncovered on low until almost done. Add the macaroni noodles and cook until noodles are done, but don't overcook the noodles.
