1 lbs of sausage
3 Tbs bacon grease or Crisco
3 Tbs of flour
1 quart of milk
Salt and pepper
Biscuits

Directions:
Directions:
Brown sausage and remove from pan to drain. Add grease and flour to make a roux, heat until well mixed and hot.
Add milk and heat over low heat until it begins to thicken. Add sausage back into the gravy. Add salt and pepper to taste.

Cook biscuits once sausage is browned and everything will finish about the same time.

A Sunday morning tradition at the Hollis household. I like to use bacon grease to make the roux but Crisco will work also. You can use frozen biscuits or you can make from scratch. Of course I always have green chile on the side for my gravy.
