Crab Boil (enough for 3 gal of water) - preferably Zatarain's
2 lemons (quartered)
1 onion (quartered)
2 whole cloves of garlic
1 box of salt (Kosher)
5 lbs red potatoes (cut into bit size)
10 ears of corn (half or in thirds)
5-6 lbs Lg shrimp (21-25)
2-3 lbs of chicken strips
2-3 lbs of Andouille sausage (cut to bit size)

Bring water, crab boil, lemons, onions, garlic and salt to a boil (15-20 mins). Add potatoes and chicken mix well and cook for 10 mins. Add corn, mix well, cook for 2 mins. Add shrimp and sausage, turn off heat as soon as it comes to a boil again. Let sit for 5-10 mins before serving to let flavor soak in. Drain off water and dump food on table to serve.

I generally prep everything the night before, making one large bag of all ingredients ( I keep everything separated) for one pot. It makes it easier if you are making multiple pots; all you have to do is pour the items in when it is time.

We have done this recipe for the Special Olympics Golf Tournament for many years and has been a great hit. The sausage was added by me to add a kick to the flavor and taste. Works best on an outdoor burner, not sure if I have ever tried it on a stove top.
