1 envelope onion or onion-mushroom soup mix
½ cup olive or vegetable oil
¼ cup butter; melted
1 tsp thyme leaves, optional
1 tsp marjaram leaves, optional
¼ to ½ cup chopped parsley, you guessed it, optional
¼ tsp pepper
2 lbs potatoes; cut into quarters

Directions:

Oven 450º shallow baking dish with Pam

Blend all the ingredients, except potatoes. Pour into baking dish.

Add potatoes, turning to coat thoroughly.

Bake 60 minutes, or till fork-tender While baking stir occasionally to coat and "crisp" all sides of potatoes.

Garnish with chopped potatoes.
