1 Egg
1/2 cup Flour
2/3 cup Beer
1 1/2 tsp Baking Powder
1/4 cup Flour
2 cups Flaked Coconut
24 Shrimp
3 cups Oil for Frying

Directions:
Directions:
1. In meduim bowl, combine egg, 1/2 cup flour, beer and baking powder
2. Place 1/4 cup flour and coconut in 2 seperate bowls
3. Hold shrimp by tail, dredge in flour, shaking off excess
4. Dip in egg/beer batter, letting excess drip off
5. Roll shrimp in coconut and place on baking sheet lined with wax paper
6. Fridgerate for 30 minutes
7. Meanwhile, heat oil to 350 degrees in a deep fryer
8. Fry shrimp in batches: cook, turning once, for 2-3 minutes, or until golden brown
9. Using tongs, remove shrimp to paper towels to drain.
