1 - 9" Frozen deep dish pastry shell

Avocado Salsa Topping
2 - Avocados, peeled, seeded, mashed
1 - garlic clove, minced
3 - TBS Lemon Juice
1 - Tomate, peeled, seeded, chopped
1 - TBS of 1 Can (4 oz) chopped chilies (reserve balance)
1/4 tsp. hot pepper sauce

Quiche Pie Filling
1/2 lb ground beef
1/4 c chopped onion
1-2 TBS taco seasoning mix
1 1/2 c grated cheddar cheese

Quiche Egg Mixture
3 eggs
1 1/2 c half and half
1/2 tbs salt
1/8 tbs pepper

Let pie crust stand at room temperature for 10 minutes

Combine Avocado Salsa in a small bowl, store in tomato. Cover and refrigerate.

Bake pastry shell in a preheated oven at 400 degrees for 7 minutes
Remove from one, set aside,

Reduce oven temperature to 375 degrees

Combine in a medium skillet the reserve been chilies and ground beef, chopped onion, and taco seasoning mix. Cover over medium-high, stirring occasionally until ground beef is browned and onion is tender. Drain off fat from ground beef mixture.

In the pastry shell alternately layer ground beef mixture and cheddar cheese.

Whip in a medium bowl until mixed well, but not frothy, eggs, half and half, salt and pepper. Pour egg mixture over ground beef mixture. Bake in oven at 375 degrees for 45 minutes or until knife inserted off-center comes out clean.

Let stand 10 minutes.

Garnish with avocado mixture

Grandma and Janine got this recipe from a Relief Society cooking class through Mountain Fuel. Little did I know that we had the "winning" recipe book. When we sat down I noticed that my book had a red star, and I thought "Hey mom, the recipe they are going to make must be this one marked in red". Not every mini-cookbook, was marked with a star. The red star meant we "won" the quiche that was demonstrated that day.
