Ingredients: 10-12 teaspoons chili powder 3-4 teaspoon ground cumin 2-4 teaspoons salt 1 - 2 cans of reg beer 2 -3 10 1/2-ounce can condensed beef broth 1 44oz bottle heintz ketchup 2-3 pounds london broil,or top round steak, 1 lb Chrizo (Mexican Sausage) or Other hot Sausage 2 lb Ground Hamburger
6-8 cloves garlic, minced 2-3 diced sweet red peppers 2-3 diced sweet yellow peppers 3 to 4 green onions with tops diced
Served with white rice, shredded cheddar cheese, sour cream, onions, and goldfish crackers for extra garnishes.No beans allowed!

Directions:Combine chili powder, cumin and salt and add to beer. Mix well and set aside for 10 minutes. Combine beef broth and catsup in a large saucepan and place over medium heat. In a large, heavy skillet, cook steak in 1 tablespoon oil over high heat just until meat loses it pink coloring. Cook ground chuck and sausage together in pan. Add to broth mixture. Add to saucepan. Stir in beer mixture and garlic. Bring mixture to boil, reduce heat to simmer and cook 30 minutes, stirring occasionally. Add peppers to mixture and cook 10 minutes longer. Add onions and cook 20 minutes longer. Makes 12-22 servings. |

Notes: Dad prefers London broil, but it is pricey. It's also better if you prepare it a day ahead and refrigerate it to allow the flavors to blend. No beans allowed!
