6 baby Dutch or fingerling potatoes.

1 sheet puff pastry dough

1/4 tsp kosher salt

1/3 cup shredded Gruyere cheese

1 1/2 tsp chopped rosemary

Directions:
Directions:
Place potatoes in a saucepan and cook until almost tender.

Cut crosswise into thin slices.

Preheat over to 400º.

Place puff pastry on a flour dusted surface.

Roll out to a 10x9 inch rectangle. Cut into 20 rectangles (2 1/4 x 2")

Prick dough liberally with a fork.

Arrange on a baking sheet lined with parchment paper and chill for 10 minutes.

Arrange 2 potato slices onto each dough piece and sprinkle with salt.

Combine cheese and rosemary then sprinkle about 1 tsp over each tartlet.

Bake at 400º for about 15 minutes.

These are super delicious.

They make take a bit of time but are totally worth it.
