1 cup unsalted butter
1-1/2 cups sugar
6 eggs, separated
1-1/2 cups sifted flour
1/2 tsp. Salt
2 tsps. Baking powder
6 Tbs. milk
1 tsp. Vanilla extract (or rum)
Zest of 1 lemon

Directions:
Directions:
Cream butter, sugar and egg yolks until light and fluffy. Sift together flour, salt and baking powder. Add to yolk mixture. Add 6 tbs. milk and flavorings.

In separate bowl beat egg whites till stiff and fold into yolk mixture.

Grease and flour a bunds pan. Bake at 375º for 45 to 60 minutes. Remove to rack to cool. Can be glazed with a lemon-sugar glaze.
