4 cups already cooked cold rice (long grain rice is best)
2 scallions, chopped
2 eggs, well beaten
1 cup or more chopped roasted pork, ham or Chinese sausage
¼ - ½ cup frozen peas- soaked in cold water
4 - 6 oz. uncooked shrimp -chopped
2-4 cloves garlic- chopped

Directions:
Directions:
1. Fry the eggs in 2 tbsp. oil.
2. Chopped eggs into small pieces and set aside.
3. Fry shrimp in 1 tbsp. oil for short time and set aside.
4. Heat 3 tbsp. oil in the wok.
5. Brown the garlic, then add scallions and then the meat, followed by the rice.
6. Stir fry until flavored.
7. Add the eggs, shrimp and peas and continue to stir fry for a short time.
8. While frying, add salt and pepper to taste.
9. Serve hot or warm.
