1 lb boneless chicken breast
½ cup chopped onion
1 clove garlic, minced
1 Tbsp margarine
2 Tbsp grated parmesan
½ c tomato sauce
¼ tsp sugar
¼ tsp dry basil, crushed
½ c shredded mozzarella
¼ c chopped green pepper

Cut chicken into 4 pieces, pound with meat mallet to tenderize. In 12 inch skillet cook onion and butter until almost tender, push to one side. Add meat to skillet, brown on both sides. Sprinkle meat with parmesan; add green pepper. Combine tomato sauce, sugar, basil, and pour over meat, stirring in onion mixture. Cover and cook on low heat 30-45 minutes until meat is tender. Sprinkle mozzarella over meat, cover and cook 1-2 minutes more to melt. Skim fat from juices.

"Santa pays a visit"
After a nice Holiday Dinner, Granddad dressed up like Santa Clause to surprise the kids. Santa (Granddad) had a nice visit, but on his way out leaving, Santa looked up to Sam and said, what a cute little boy. I think I will take you with me." Out the door went Santa and Sam. All of the children, who loved Sam were in tears. Marjorie remembers that she was 5 at the time and said, "I thought well, that's it. No more Sam!"
