Ingredients: 12 med flour tortillas 1 whole chicken. Boiled and shredded. 2 cans cream of chicken soup 3/4 lb shredded cheddar cheese 3/4 lb shredded monterey jack cheese 1 small can diced chilies 1 pint sour cream 6 green onions w/ tops chopped

Directions:Mix soup, onions, sour cream, chilies, and most of cheese. Set 1 1/2 cup of mixture aside. Add chicken to the mixture. Roll chicken up in tortillas and place tightly together in a greased 9 X 13 in pan. Cover tortillas with reserved sauce and sprinkle with remaining cheese. Bake at 350 degrees for 45 minutes. |

Notes: Grandma adopted some really great Mexican dishes when she moved from Iowa to California. This is one of our family favorites. You can make it a day ahead and refrigerate. A little salsa or hot sauce on the top adds extra spice. Freezes well after baking and is a good dish for those times you want to drop off a meal to someone. We serve it with fresh avacados sprinkled with lime juice or chips and salsa.
