Tracey Schoenberger (Stuckey)


1 lb ground beef, browned and drained
4 Tbsp oleo
1 small onion chopped
c celery
c carrots, shredded
c flour
1 tsp dried parsley
1 tsp dried basil flakes
3 c chicken broth or bouillon
4 c hashbrowns
1 c milk
lb Velveta
c sour cream

(I also use garlic powder, onion powder, celery salt, salt, and pepper to taste)

Saute veggies in oleo. Add flour and seasonings. Stir consistently for 2 minutes. Add broth, potatoes, and ground beef. Simmer 15-20 minutes. Stir occasionally. Add milk and cheese stirring as needed until cheese melts. Add sour cream just before serving.
