2 c sugar
½ c shortening
2 eggs
4 c chopped raw unpeeled apples
2 c flour
¼ tsp salt
1 tsp cinnamon
1 tsp soda
½ c nuts

Topping:
¾ Tbsp oleo
¼ c cream
¾ c brown sugar
1 c coconut
½ c nuts

Directions:
Directions:
Mix sugar and shortening; add eggs. Mix in all dry ingredients. Add apples and nuts, then vanilla. Bake at 375º for 45 minutes or until done. I use a bundt cake pan.


Topping:
Mix oleo, brown sugar and cream and boil 2 minutes. Add coconut and nuts. Mix and spread over cake.

I love this cake because it freezes so well. It has a topping but I never use it.
