3/4 lb. elk steak
1 Tbsp. plus 1 tsp. white vinegar
2 Tbsp. soy sauce
4 cloves garlic, minced
1 or 2 limes, juiced
2 Tbsp. olive oil
1/4 tsp. salt
1/4 tsp. ground black pepper
1/4 tsp. ground white pepper
1/4 tsp. garlic powder
1/4 tsp. chili powder
1/4 tsp. dried oregano
1/4 tsp. ground cumin
1/4 tsp. paprika

Directions:
Directions:
Place the elk steak in a large glass baking dish.

In a medium bowl, whisk together the vinegar, soy sauce, minced garlic, lime juice, and olive oil. Add remaining ingredients and whisk until well blended. Pour over steak, and turn over to coat both sides. Cover with plastic wrap, and marinate for 1 to 3 days.

Grill on medium-high heat until medium rare. Slice into strips and serve with corn tortillas, avocado, and Pico de Gallo.
