Cover leg with olive oil, salt, pepper, and oregano. Insert 6-8 cloves of garlic (cut into 3, depending on the size of the garlic) into holes cut into the meat. Sprinkle with parmesan cheese.

Roast uncovered on a rack.

Cook 2-3 hours. If cooking on grill, mount on spit before spicing up.

Cook until temperature is 175º for medium and 180º well done.

Let sit for 20 minutes covered with foil before carving.
