Deep Fried Black-Eyed Peas & Ham Bites

1 can Black-Eyed Peas, drained & roughly mashed
2 Shallots, finely chopped
½ Red Bell Pepper, finely chopped
1 cup cooked Ham, finely chopped
1 cup Cornstarch
4 Egg Whites
Salt & Freshly Ground Pepper

Directions:
Directions:
In a large bowl, combine the peas, shallots, bell pepper and ham. Mix in cornstarch, egg whites, salt and pepper.

Heat oil in deep-fryer to 325º. Working in batches and using 2 teaspoons, carefully slide small bite size portions of mix into oil.

Deep fry for approximately 5 minutes or until golden brown and crispy. Drain on paper towel.

Serve alongside with Sweet Cranberry Dipping Sauce.

1 can Whole Cranberry Sauce
1 Tbsp. Maple Syrup
1 tsp. Garlic Powder

Directions:

In a small saucepan, combine all ingredients and heat until warm.

Great with Black-Eyed Peas & Ham Bites.

This is a Paula Deen recipe that is always a huge hit. I usually make these on New Year's Day so that I can get the black-eyed peas in for luck for the year. I leave out the bell pepper as I am not a fan of them.
