Ingredients:  
Ingredients:  
2 chicken breasts or 6 thighs cut into bite size pieces
2 T soy sauce
1 tsp cornstarch
Combine till coated and set aside.

Batter:
c all purpose flour
2 T cornstarch
tsp baking soda
tsp salt
tsp sugar
1/8 tsp baking powder
c water


Combine all ingredients in a bowl and place chicken in batter. Fry until golden brown.


Sauce:
c pineapple juice
c chicken broth
c brown sugar
c water
2 T cornstarch
3 T cider vinegar
3 T ketchup
2 T soy sauce

Combine ingredients in a saucepan over medium heat, stirring occasionally, until thickened.
