1 (14.75 oz) can salmon
2 c. soft bread crumbs
1/3 c. finely minced onion
¼ c. milk
2 eggs
2 T. minced parsley
1 T. lemon juice
¼ tsp. salt
¼ tsp. dill weed
Dash pepper.

Directions:
Salmon Patties: Drain salmon, reserving 2 T liquid, flake. Combine all ingredients including the 2 T liquid. Shape into 8 1-inch thick patties. Pan-fry on both sides in 2 T oil or butter until golden brown.

Salmon Loaf: Drain salmon, reserving 2 T liquid, flake. Combine all ingredients including the 2 T liquid. Place in a well-greased 8 ½ x 2 ½ inch loaf pan or shape into a loaf on a greased baking sheet. Bake at 350 degrees for 45 minutes. Makes 4 to 6 servings.
