1 cup uncooked white rice
4 large eggs, separated
¼ cup fresh lemon juice
8 cups fat-free chicken broth


Directions:

Bring chicken broth to a boil. Season with salt. Add rice. Simmer covered for 20 minutes or until rice is tender. Remove from heat.

In a heatproof bowl beat egg whites until stiff. Add yolks and beat well. Slowly Add lemon juice, beating constantly.

Still beating, add 2 cups hot chicken broth. (Constant beating keeps the soup from curdling).

When the eggs and broth are well-combined, pour mixture back into the remaining broth and rice. Stir well over low heat, but do not let boil.
