Salad:

1 (8-oz./225-g.) bag mixed greens
1 cup shredded beets
1 avocado, cubed
1/4 cup dried cranberries
1/4 cup shelled pistachios
1/4 cup pecans
1/2 cup Ceasar Croutons

Dairy Dressing:

1/2 cup Mayonnaise
1/4 cup sour cream
2 scallions
1 clove garlic
1 tablespoon vinegar
1 tablespoon lemon juice
1/2 teaspoon salt
black pepper, to taste
Directions:
Directions:
Arrange salad ingredients in a bowl.

Place all dressing ingredients in a small bowl and puree until smooth. Pour over salad, toss, and enjoy.
