Baked Turkey Creole Chili Recipe

2 stalks celery, sliced
1 medium green pepper, chopped
1 medium onion, chopped
1 clove garlic, minced
2 tbsp. butter
4 tsp. flour
1 tbsp. chili powder
tsp. dried thyme, crushed
tsp. dried rosemary
⅛ tsp. red pepper
1 14 oz. can stewed tomatoes
1 12 oz. can V8
1 c. cooked turkey, cubed
salt & pepper
2 c. hot cooked rice

Cook celery, green pepper, onion and garlic in melted butter until tender. Stir in flour, chili powder, thyme, rosemary and red pepper. Add undrained stewed tomatoes and V8 juice. Cook and stir until bubbly. Add turkey. Transfer to 1 qt. casserole. Cover and bake in 375 oven for 20 minutes. Season with salt and pepper. Serve over cooked rice
