1 1/2 cup flour
3/4 cup Brown sugar
1/2 tsp baking soda
1/2 tsp .salt
1/3 cup oil
1 egg lightly beaten
1/2 cup butter milk (1/2 cup milk,1 1/2 tbsp vinegar)
1 tsp .vanilla
1 cup diced rhubarb
1/2 cup chopped walnuts

TOPPING
1 4 cup Brown sugar
1/4 cup walnuts
1/2 tsp cinnamon

Directions:
Directions:
Combine flour, Brown sugar, baking soda and salt. Combine oil,
egg, buttermilk and vanilla. Stir into dry ingredients. Fold in rhubarb and walnuts. Fill muffin cups 2/3 full. Sprinkle topping.


Bake 375 degrees 20 to 25 minutes.

Personal Notes:
Put 1.5 C Rhubarb and 1 C Walnuts. Used large muffin pan and baked for 29 minutes. Very good!
