5 lbs. Pork Shoulder
Sea Salt
2 Tbsp. Vegetable Oil
Water
Cinnamon Stick
2 Bay Leaves
1 tsp. Chile Powder
1 tsp. Chile de arbol (or ancho chile powder)
¼ tsp. Cumin
5 Cloves Garlic

Directions:
Directions:
Cut pork into 4 -5 inch chunks. Salt and brown meat in dutch oven. Remove excess fat. Remove meat and add 2 cups water and scrape bottom of pan. Add cinnamon stick, bay leaves, garlic, chili powders and cumin. Mix and add neat back. Add water until meat is about ⅔ covered.

Braise in oven, uncovered, for 3½ hours. Stir pork occasionally during braising.

Remove from oven and shred pork.
