2 eggs, separated
2 C milk
1/4 C sugar
3 t quick cooking tapioca
1/4 tsp salt
1 tsp vanilla
2 tbsp sugar

Directions:
Directions:
In saucepan, combine egg yolks, milk, 1/4 C sugar, tapioca, and salt; mix well. Cook over medium heat until mixture comes to a full boil, stirring constantly. Remove from heat. Blend in vanilla. In a bowl, beat until mixture forms soft peaks. Fold into tapioca mixture just until well-combined. Spoon into serving dishes. Cool.
