4 1/2 cup sugar
1 Cup cornstarch
2 tsp cinnamon
1/4 tsp all spice
1 tsp salt
3 Tbsp lemon juice
5 - 6 lbs tart apples
10 cups water

Directions:
Directions:
In a large pan, combine first 5 ingredients. Add 10 cups water, stir and cook until thick and bubbly. Add lemon juice. Peel and core apples, slice and pack into hot jars, leaving 1 inch space at the top. Pour hot syrup over apples to 1/2 inch from the top rim of the jar. Put on lids, cold pack for 20 minutes. Makes 6 quarts.

You may bake this in a pie crust: dot with butter and bake 400º for 50 minutes.

OR use for apple crisp and simply add the crumb topping. Bake 350º for 30 minutes or until the sides are bubbling.
