10 lbs leg quarters
cup oil
cup flour

Dumplings:
1 pound of flour
cup oil
2 Tbs salt
3 Tbs black pepper
2 cups milk

Directions:
Directions:
Boil chicken until cooked. Debone the chicken. Save the chicken broth. Strain well.

Put 1/2 cup oil in a pot. Heat and add 1/2 cup of flour. Brown. Add the saved chicken broth. Stir well. Add more water if needed.

Dumplings: Add all the ingredients together. Roll out dough until 1/8" thick. Cut into X square. Drop dumplings in one at a time in gravy and chicken. Salt and pepper to taste if needed. Should make 3 to 400 dumplings.
