2 cups (8 oz) dry macaroni
2 cups (8 oz) shredded cheddar cheese
2 cups (8 oz) shredded Pepper Jack cheese, divided
1 can (12 fl oz) Evaporated Milk
1/2 tea ground black pepper, optional

Optional:
1/2 to 1 cup broken tortilla chips
1/4 to 1/2 tea crushed red pepper flakes

Preheat oven to 350 degrees.
Butter 2½ quart casserole
Cook macaroni according to package directions, drain and return to pan.
Add cheddar cheese, 1½ cups Pepper Jack cheese, evaporated milk and pepper. Stir until well combined.
Pour into prepared casserole. Sprinkle remaining Pepper Jack cheese over top. Put red pepper flakes and tortilla chips on top. Cover tightly with foil. Bake for 20 minutes. Uncover and bake additional 10 minutes or until lightly browned

This recipe is an absolute family recipe so we always double it. We also omit red pepper flakes and tortilla chips but instead cover top with buttered Panko bread crumbs for added texture before baking.
