6 eggs, separated
1.25 cup sugar
2.5 heaping T of cornstarch
1 large can evaporated milk
1/2 gallon whole milk
2 tsp vanilla
nutmeg (optional)

Directions:
Directions:
Mix 6 egg yolks, 1.25 cup sugar and 2.5 heaping T of cornstarch in a large, heavy saucepan. Add 1 large can evaporated milk. Stir together. Add 1/2 gallon of whole milk. Stir constantly over low heat until thick. Meanwhile, beat 6 egg whites. Fold egg whites into custard and then beat with electric mixer until fluffy. Add 2 tsp vanilla. Pour into large container. Sprinkle nutmeg on top. Chill in refrigerator. Serve.

Egg substitute can be used for egg yolks.
