1 green apple, cored
1 cup buckwheat flour
1/2 cup stevia or sugar of your choice
1 tsp. baking powder
2/3 cup water

Directions:
Directions:
Grate the apple into a bowl. Add the buckwheat flour, water, the sugar and baking powder. Mix together to form a thin batter. Using a ladle or ice cream scoop, place small rounds of the pancake batter in a nonstick frying pan over medium heat. Cook each pancake for about 2 minutes or until it begins to bubble, then flip it over and cook for a further minute on the other side before removing from the pan. Continue until all the batter is used up (the batter will make about 8 pancakes).
