2 T. Vegetable Oil
1 med. onion chopped
1 4oz. can chopped green chilies drained
3/4 cup uncooked rice
1 beef boullion cube
2 16oz. can kidney or red beans
1/2 c. monterey jack cheese
1 lb. smoke sausage (Mom uses andouille)
2 tsp. Tabasco Sauce

Directions:
Directions:
In medium saucepan, heat oil over med. high heat. Add onion and chilies and saute 5 min. Add rice, water, and bouillon cube. Bring to a boil. Reduce heat. Simmer uncovered 15 min. until rice is tender. Stir in beans, cheese, sausage and tabasco. Simmer 5-10min. Serve hot.

Dad loves it when Mom makes this. It is super filling. In his travels to Louisiana for work, he would always bring home andouille sausage for her to make this.
