85g gluten free pasta shapes

½ red pepper, chopped

1 baby gem lettuce

handful halved tomatoes

1 cooked chicken breast

1 tbsp low FODMAP basil pesto

2 tbsp lactose free cream or mayo

Directions:
Directions:
Step 1: Cook the gluten free pasta following pack instructions.
Step 2: Meanwhile, mix the red pepper with the tomatoes, lettuce and chicken.
Step 3: Mix the pesto and lactose free cream.
Step4: Drain the pasta, then stir it through 1tbsp of the pesto mix.
Step 5: Drizzle the chicken with the remaining pesto, and serve the gluten free pasta.
COOKING CHICKEN:
Step 2: Cut off any fat, rinse under water, and pat dry with a towel.
Step 3: Chicken breasts are usually pretty thick. I cut mine in half so I get two pieces of chicken out of each breast.
Step 4: Season. I always season with salt, pepper and garlic powder.
Step 5: Drizzle olive oil in a saute pan and place over medium-high heat. You want the pan to be hot. Not too hot though
Step6: Let is cook for about 3 minutes and then turn it just once to cook on the other side for another 3 minutes. Cooking time all depends on the thickness of the chicken breast.
