2 eggs, beaten
2 tbsp. 2% milk
2 cans (each 6 oz./170 g) drained & flaked
½ c. rolled oats
1 carrot grated
½ red OR green bell pepper, finely diced
1 red onion, finely chopped
2 tbsp chopped fresh basil
Pinch of dried oregano
Leaves of 1 sprig fresh thyme
Salt & pepper to taste.

With rack in the centre of oven, preheat oven to 350 º F. In a medium bowl combine the first 11 ingredients, mixing well.
Oil an 8" x 4" loaf pan. Pat mixture evenly into the pan and bake in the centre of the preheated oven for about 35 minutes. Let cool to room temperature before turning loaf out onto a platter and slicing to serve.

NOTE: Loaf may be covered and refrigerated for 1 day. Bring to room temperature before baking

Serves 4 - 6.
