8 medium potatoes
5 slices bacon, diced
1 thinly sliced medium onion
2 tbsp flour
½ c vinegar
½ c water
2 tsp salt
Speck of pepper
½ c diced celery
4 shelled hard cooked eggs
½ c mayonnaise or salad dressing

Directions:
Directions:
Cook potatoes until tender. Drain, cool if desired, then peel and dice - there should be about 5 cups. Saute the bacon and onion together in a skillet over low heat until bacon is browned and onion is tender. Stir in the flour. Then add the vinegar, water, salt and pepper, and cook until mixture thickens, stirring constantly. Remove from heat and pour over combined potatoes, celery, and eggs which have been diced. Mix lightly with a fork and chill. Just before serving, stir in mayonnaise lightly with a fork.
