2 stalks celery, diced
1 yellow pepper, sliced
1 red pepper, sliced
1 medium onion, chopped
4- 15 oz cans black-eyed peas, rinsed and drained
2 jalapeno peppers, seeded and diced
1 garlic clove, minced or pressed
1 tsp salt
1 tsp pepper
tsp ground cumin
c red wine vinegar
2 Tbsp balsamic vinegar
c olive oil
4-6 slices bacon, cooked and crumbled
2 Tbsp. chopped fresh cilantro

Make dressing- Combine vinegars in a small bowl; whisk in oil in a slow steady stream, blending well.
Pour over other ingredients, except bacon and cilantro in a large bowl and mix. Cover and chill 3 to 4 hours. Stir in bacon and cilantro.
