1c + 2 tbsp sifted all purpose flour
c yellow or white corn meal
3 tsp baking powder
tsp salt
2 tbsp granulated sugar
1 egg, well beaten
1 c bottled milk or c evaporated milk and c water
c melted shortening

Directions:
Directions:
Sift together flour, corn meal, baking powder, salt and sugar. Combine the egg, milk, and shortening. Turn liquid ingredients into dry ingredients all at one, stirring quickly and vigorously until mixture is just mixed and had a lumpy appearance, but no longer. Turn into a greased or oiled 8x8x2 pan and bake in a hot oven of 425 for 25-30 minutes or until done. Cut into squares, and serve hot.
